The Perfect Veggie Omelet with Boca

Since my husband and I are beginning to make healthier choices in our eating habits, I have become more inspired to create and serve healthier meals.  As you  know there are many different ways with a number of ingredients that are used in creating the perfect omelet.  For me, my inspiration comes with what I have in the refrigerator that day.  For the main ingredient, I chose  “4 Grain All Natural Eggs”, their packaging claims that they are produced by hens that are “fed a wholesome all natural diet of golden grains & soy protein and are also enriched with vitamin E.”

Ingredients:
2 “4 Grain All Natural Eggs” with the yolk and 1 egg white
1tbl of skim or low-fat milk
2tsp of EVOO
1 Boca (Flame Grilled) Meatless Burger (sold in your freezer section)
1/2 cup of chopped onion
1/2 of a zuccini (cleaned with skin)
1/2 cup of red bell pepper
dash of salt
dash of pepper
cilantro (for garnish/optional)
salsa (topping/optional)

Note: This recipe is for 1 serving

Cooking Instructions:

Use a small mixing bowl, combine all eggs and add 1tbl of milk, mix with fork or whisk, set aside.
Using  a non-stick sautee’ pan, cook your Boca as directed on package, remove from heat, cut into bite size chunks set aside and cover with foil. Now add 1tsp of EVOO, heat pan to medium. Add your vegetables with salt and pepper, stir-fry approx; 3 to 5 minutes just enough that your veggies still have a crunch (not mushy) then set aside and cover with foil.
Use the same pan and add another teaspoon of EVOO, pour your eggs into the pan, I usually begin on medium heat then turn your heat down to low so your eggs with cook slowly (cover) Once you see that the omelet is cooking through, you can then add your veggies and Boca. Carefully take your spatula and gently fold your omelet over, continue cooking on low (cover) for approx 3 to 4 minutes. Gently flip your omelet over and cook another 3 to 4 minutes on low to ensure that your omelet is cooked through (no runny eggs).
When your omelet is done, tip your pan and gently slide your omelet onto a plate. Garnish with cilantro and add salsa to taste.

Now you can enjoy a healthy and delicious meal any time of the day!
